GG Crusted Zucchini Fries
Serves 4-6
Ingredients
- 2 medium zucchinis
- 1/3 cup pulverized GG crackers
- 1 egg
- 1/4 cup freshly grated parmesan cheese
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
Directions
- Preheat oven to 400 degrees. Spray baking pan with non-stick spray.
- Slice each zucchini in half lengthwise 4 times (to make 8 long sticks). Cut into slices once crosswise, making 16 sticks from each zucchini (4 inches long and 1/2 inch thick each).
- Add GG’s, parmesan cheese, garlic powder, and black pepper to a small bowl.
- Whisk egg in a separate bowl.
- Dip zucchini sticks individually in egg mixture. Shake off excess and then coat into GG mixture, coating all sides.
- Place each coated zucchini stick on baking pan. Bake in oven for 30 minutes, flipping fries halfway into baking.
- Serve immediately with marinara sauce or your favorite dipping sauce.

Inside Out Spaghetti & Meatballs
Serves 4
Ingredients
- 1 pound lean grass-fed ground beef
- 2 ounces Banza chickpea spaghetti
- 1 egg, beaten
- 1/2 cup pulverized GG crackers (6 crackers)
- 1 tbsp dried oregano (or any Italian seasoning)
- 1 tsp salt
- 1/2 tsp pepper
- 1 jar of marinara sauce
- Optional garnishes: fresh basil and parmesan cheese
Directions
- Cook spaghetti al dente, approximately 8 minutes. Drain and set aside to cool.
- Whisk egg in medium bowl. Add ground beef, pulverized GG crackers, oregano, salt and pepper. Combine all ingredients until throughly mixed.
- Form meat into 2-inch meatballs. Form approximately 14-15 meatballs. Flatten eat meatball into a patty.
- Use chopsticks or fork to twirl a few strands of spaghetti into a nest. Place each nest into the center of the meat patty and then roll back into a meatball, making sure that the spaghetti stays inside of the meatball.
- To cook meatballs in sauce, bring marinara sauce to a simmer and add to sauce pan. Cover and simmer for 30-35 minutes, until meatballs are cooked.
- To bake meatballs in oven, arrange meatballs on lined baking sheet coated with non-stick spray. Bake at 400 degrees for 25-30 minutes, until meatballs are cooked.
- Serve immediately with marinara sauce, freshly chopped basil, and grated parmesan if desired.

Spiralized Zucchini and Parmesan Waffles
Serves 2-3
Ingredients
- 2 medium zucchinis, spiralized
- 1 egg, beaten
- 1/4 cup milk
- 1/2 cup grated parmesan cheese (plus extra for topping)
- 1/2 cup pulverized GG crackers (6 crackers)
- 1/2 tsp oregano (or any Italian seasoning)
- salt and pepper
- non-stick spray for waffle maker
Directions
- Place spiralized zucchini in colander, sprinkle with a pinch of salt, and let sit for 20 minutes.
- Place zucchini in cheese cloth or dish towel and squeeze out as much liquid as possible.
- In medium bowl, whisk together egg, milk, and parmesan cheese.
- In small bowl, combine pulverized GG crackers, oregano, and a pinch of salt and pepper.
- Add contents of small bowl to medium bowl and stir well. Add zucchini to bowl and combine.
- Preheat waffle maker to highest setting and coat with nonstick spray.
- Scoop large spoonful of mixture into center of waffle maker. Cook approximately 3-4 minutes (use waffle maker indicator light to let you know when it is ready). Repeat for remaining waffles (depending on size of waffle, you should yield approximately 6 small waffles).
- Top with grated parmesan and serve with marinara or your preferred dipping sauce.
