Blistered Green Beans with Hoisin Sauce

Serves 2-4

Ingredients

  • 1 pound green beans, rinsed and cut on both sides
  • 1 tsp canola oil
  • 1 garlic clove, minced
  • 2 tbsp hoisin sauce
  • sesame seeds

Directions

  1. Heat large skillet to medium-high heat with canola oil.
  2. Add green beans to skillet and cook until blistered, 3-5 minutes.
  3. Add garlic and sauté for one minute.
  4. Top with hoisin sauce and cook for additional minute until sauce turns into a glaze.
  5. Sprinkle with sesame seeds and serve immediately.

Chocolate Pumpkin Pie Muffins

Chocolate Pumpkin Pie Muffins

Yields 12 muffins

Ingredients

Directions

  1. Preheat oven to 350 degrees. Spray muffin pan with non-stick spray.
  2. Add all ingredients except cream cheese and chocolate chips to a large bowl and mix well.
  3. Fold chocolate chips into batter.
  4. Scoop small amount of batter into each muffin tin.
  5. Scoop small spoonful of cream cheese into each muffin tin.
  6. Cover each muffin with remaining batter.
  7. Bake in oven for 25 minutes. Let cool and enjoy!

Caramelized Onion Dip with Parmesan Zucchini Chips

Caramelized Onion Dip

Serves 4-6

Ingredients

  • 2 tbsp olive oil
  • 2 white or yellow onions, thinly sliced
  • 1/2 tub Melanie’s Medleys Chive Cream Cheese
  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp chili powder
  • 1/2 tsp onion powder
  • Optional garnishes: freshly chopped chives

Directions

  1. Heat olive oil in frying pan over low heat. Add onions, salt, pepper, and chili powder to pan and sauté over low heat for 45-50 minutes, until onions brown.
  2. Place cooked onions in food processor and blend until pureed.
  3. Warm cream cheese in microwave for 15 seconds. Add cream cheese, mayonnaise, sour cream, and onion powder into medium bowl. Mix until smooth. Add onions to mixture and stir to combine . Refrigerate until serving.
  4. Garnish with chopped chives and serve at room temperature.

Parmesan Zucchini Chips

Serves 4-6

Directions

  1. Preheat oven to 425 degrees. Line baking sheet with wax paper and coat with cooking spray.
  2. Toss zucchini slices with salt in a bowl. Let sit for 10 minutes to dry out zucchini. Drain any excess water.
  3. Add olive oil to zucchini and toss.
  4. Combine pulverized GG’s, parmesan cheese, and pepper into a separate bowl.
  5. Dip each zucchini slice into the GG mixture and coat both sides. Place each slice on the baking sheet.
  6. Bake for 40 minutes, turning over each slice after 20 minutes.
  7. Serve immediately or store in air-tight container.

Healthy Chicken Pho with Shirataki Noodles

Healthy Chicken Pho with Shirataki Noodles

Serves 4

Ingredients

  • 8 cups organic chicken broth
  • 1 whole rotisserie chicken
  • 3 whole cloves
  • 2 star anise
  • 1 cinnamon stick (3 inch piece)
  • 1/2 tbsp freshly grated ginger
  • 2 garlic cloves, grated
  • 1/2 tsp Sriracha sauce
  • 2 tbsp hoisin sauce
  • 2 packages of Angel Hair Tofu Shirataki Noodles 
  • Optional Garnishes: lime, cilantro, green onions-sliced into 1/4 inch pieces, bean sprouts, Thai basil, jalepeno, red onion, thinly sliced

Directions

  1. In large pot, add chicken broth, cloves, star anise, cinnamon stick, ginger, garlic, sriracha, and hoisin sauce. Bring to boil.
  2. Reduce heat and let it simmer for 15 minutes.
  3. Meanwhile, rinse and drain shirataki noodles. Dry them out in a frying pan on high heat. Set aside.
  4. Using a slotted spoon, remove cloves, star anise, and cinnamon stick from soup.
  5. Add soup to bowls.
  6. Shred the desired amount of chicken from the whole rotisserie chicken and add to the soup bowls.
  7. Add shirataki noodles to soup bowls.
  8. Serve soup and top with desired garnishes.

Taco Zucchini Boats

Taco Zucchini Boats

Serves 4

Ingredients

  • 4 zucchinis
  • 1 lb. lean ground beef
  • 1 packet taco seasoning
  • 1 jar salsa
  • Optional toppings: Mexican cheese, salsa, pico de gallo, guacamole, and cilantro

Directions

  1. Preheat oven to 400 degrees. Add salsa evenly to bottom of lasagna pan.
  2. Slice each zucchini lengthwise and scoop out the flesh in the middle. Boil water in pot and cook zucchini in water for one minute. Set aside.
  3. Sauté ground beef in large skillet pan until cooked. Drain excess grease. Return pan to heat and add taco seasoning.
  4. Scoop taco meat evenly into zucchini boats. Sprinkle with cheese if desired.
  5. Place each zucchini boat into lasagna pan that is coated in salsa and cover pan with foil.
  6. Cook in oven for 30 minutes.
  7. Remove from oven and garnish with additional toppings.

Chocolate Chip & Strawberry Cream Cheese Stuffed Waffles

Inspired by the original F-Factor Pancake/Waffle

Serves 1

Ingredients

Directions

  1. Add all dry ingredients, except chocolate chips and cream cheese, into a bowl and mix well. Add wet ingredients and mix all ingredients together.
  2. Fold in chocolate chips and mix well.
  3. Pour in half of the batter into the hot waffle maker. Add scoop of Melanie’s Medleys Strawberry Cream Cheese on top of center of the batter. Cover with remaining batter. Close lid.
  4. Cook until waffle maker indicates waffle is done.
  5. Drizzle with fiber syrup and top with fresh strawberries.

GG Crusted Zucchini Fries

 

GG Crusted Zucchini Fries

Serves 4-6

Ingredients

Directions

  1. Preheat oven to 400 degrees. Spray baking pan with non-stick spray.
  2. Slice each zucchini in half lengthwise 4 times (to make 8 long sticks). Cut into slices once crosswise, making 16 sticks from each zucchini (4 inches long and 1/2 inch thick each).
  3. Add GG’s, parmesan cheese, garlic powder, and black pepper to a small bowl.
  4. Whisk egg in a separate bowl.
  5. Dip zucchini sticks individually in egg mixture. Shake off excess and then coat into GG mixture, coating all sides.
  6. Place each coated zucchini stick on baking pan. Bake in oven for 30 minutes, flipping fries halfway into baking.
  7. Serve immediately with marinara sauce or your favorite dipping sauce.

Inside Out Spaghetti & Meatballs

 

Inside Out Spaghetti & Meatballs

Serves 4

Ingredients

Directions

  1. Cook spaghetti al dente, approximately 8 minutes. Drain and set aside to cool.
  2. Whisk egg in medium bowl. Add ground beef, pulverized GG crackers, oregano, salt and pepper. Combine all ingredients until throughly mixed.
  3. Form meat into 2-inch meatballs. Form approximately 14-15 meatballs. Flatten eat meatball into a patty.
  4. Use chopsticks or fork to twirl a few strands of spaghetti into a nest. Place each nest into the center of the meat patty and then roll back into a meatball, making sure that the spaghetti stays inside of the meatball.
  5. To cook meatballs in sauce, bring marinara sauce to a simmer and add to sauce pan. Cover and simmer for 30-35 minutes, until meatballs are cooked.
  6. To bake meatballs in oven, arrange meatballs on lined baking sheet coated with non-stick spray. Bake at 400 degrees for 25-30 minutes, until meatballs are cooked.
  7. Serve immediately with marinara sauce, freshly chopped basil, and grated parmesan if desired.

Healthy Spaghetti Pie

Healthy Spaghetti Pie 

Serves 2-4

Ingredients

Directions

  1. Preheat oven to 350 degrees.
  2. In large bowl, mix together cooked noodles, parmesan, 1 cup mozzarella, eggs, marinara sauce, and oregano.
  3. Use non-stick spray to coat a 9-inch or 10-inch pie pan or springform pan. Add mixture to the pan evenly. Top with remaining mozzarella cheese.
  4. Bake in oven for 45 minutes. Broil on high for 2 minutes.
  5. Remove from oven and let sit for 10-15 minutes. Slice into wedges. Top with chopped basil and additional grated parmesan.

Spiralized Zucchini and Parmesan Waffles

Spiralized Zucchini and Parmesan Waffles

Serves 2-3

Ingredients

Directions

  1. Place spiralized zucchini in colander, sprinkle with a pinch of salt, and let sit for 20 minutes.
  2. Place zucchini in cheese cloth or dish towel and squeeze out as much liquid as possible.
  3. In medium bowl, whisk together egg, milk, and parmesan cheese.
  4. In small bowl, combine pulverized GG crackers, oregano, and a pinch of salt and pepper.
  5. Add contents of small bowl to medium bowl and stir well. Add zucchini to bowl and combine.
  6. Preheat waffle maker to highest setting and coat with nonstick spray.
  7. Scoop large spoonful of mixture into center of waffle maker. Cook approximately 3-4 minutes (use waffle maker indicator light to let you know when it is ready). Repeat for remaining waffles (depending on size of waffle, you should yield approximately 6 small waffles).
  8. Top with grated parmesan and serve with marinara or your preferred dipping sauce.
